Pumpkin & Cream Cheese Snack
(recipe makes one toddler-sized serving)
- 5 Tbsp. of 100% pure canned pumpkin
- 2 Tbsp. cream cheese
- Add cream cheese to pumpkin in a microwave-safe bowl
- Heat mixture in the microwave for 30-45 seconds
- Stir well and serve on its own or mix into oatmeal
Stewed Apples
- 1 apple, peeled, cored and sliced into 8 pieces
- 1 Tbsp. butter
- Cinnamon
- 1 Tbsp. water
- Cook apples in water, butter and cinnamon until soft
- Serve on their own or in hot cereal

Yogurt Smoothie(s)
(any combination of fruits works well in a smoothie)
- 1 cup whole milk, plain yogurt
- 1/2 banana
- 1 handful of blueberries
- 3 ice cubes
- Blend in blender until smooth
- Serve in a straw cup
egg Cups
- 1 10 oz. package of frozen, chopped spinach
- 4 eggs, scrambled
- 3/4 cup shredded cheddar cheese
- Microwave the spinach on high for 2 1/2 minutes and drain the excess liquid
- Line a 12-cup muffin pan with baking cups
- Combine the eggs, cheese and spinach in a bowl
- Mix well
- Divide evenly among the muffin cups
- Bake at 350° for 20 minutes, or until a knife inserted in the center comes out clean
